Barnyard Millet (Oodalu) is a gluten-free, rich source of digestible protein, is least caloric dense compared to other cereals, has a low glycemic index and contains a good amount of dietary fibre. It is also a great source of iron. Whole barnyard millets are commonly used to prepare upma, khichdi and pulav. In barnyard millet the major fatty acid is linoleic acid followed by palmitic and oleic acid.
